Always true to his roots: Llançà
Chef Paco Pérez’s passion for cooking was awakened at a very early age. When he was 12 years old he started his career working at the family-owned tapas bar, where he learned traditional cooking. From then onwards he combined his studies with working at different restaurants during the summer holidays; once he finished his studies he focused completely on the world of gastronomy.
During his training and learning development, he gained professional experience in France with Michel Guèrard, one of the forefathers of the Nouvelle Cuisine and holder of three Michelin stars. Returning to Cataluña he identified with the creativity of Ferrán Adrià at El Bulli, where he also gained work experience.
He married Montse Serra and together they took on the evolution of restaurant Miramar, in the village of Llançà.
In 2008 Paco Pérez took over the kitchen at Enoteca in Hotel Arts Barcelona, where he has the opportunity to bring the full essence of his origins in the Costa Brava to the Barcelona coast.
Paco Pérez works with the goal of winning the complicity of his customers on a daily basis, thanks to a unique and innovative concept described as the freshness of the sea and the essence of ingredients.
Paco Pérez’s Career
A chef with character and a deep culinary vocation. His career, marked by an inquisitive spirit, expertise and teamwork, has brought him Michelin star recognition.
Chef Paco Pérez has five Michelin stars; two stars at his restaurant Miramar, one Michelin Star in ARCO, Gdansk and two stars at the restaurant Enoteca in Barcelona.
Paco Pérez does not give up in his quest for culinary experiences by means of a more modern and creative cuisine; proof of this are his other projects, such as Eggs restaurant and La Royale in Barcelona.
